About this course

Both levels, one sitting, one certificate.

The HACCP Level 1 & 2 course is Guardian Safety's most popular food safety training, and the one most employers ask for. It brings together the two levels that Irish food businesses need their staff to hold: Level 1, the induction-level basics every person in a food area must know, and Level 2, the full food hygiene training for anyone who prepares, cooks, serves or stores food.

It has been mapped to the FSAI guidelines on food safety training, which sets out the skills food handlers are expected to demonstrate at each level. That means the content lines up with what an Environmental Health Officer looks for during an inspection: personal hygiene, cross-contamination, temperature control, cleaning, pest awareness, record keeping and your role in the business's HACCP system.

Online, the course is video-based and self-paced. Watch the lessons, complete the knowledge checks, pass the multiple-choice exam and your certificate is generated immediately. Most people finish in around 160 minutes. For teams, the same course runs as a full-day classroom session with a Guardian trainer, at our Dublin training centre or at your premises.

EU Regulation 852/2004, which applies in Ireland, requires every food business to make sure its food handlers are supervised, instructed and trained in food hygiene to the level their job needs. Level 1 & 2 is that training for most kitchen, counter and service roles.

The law and guidance behind this course

EU Regulation 852/2004 on the hygiene of foodstuffs

requires food business operators to ensure food handlers are supervised, instructed and trained in food hygiene matters commensurate with their work.

FSAI Guide to Food Safety Skills

sets out the food safety skills for Level 1 (Induction), Level 2 (Additional) and Level 3 (Management). This course is mapped to the FSAI guidelines.

S.I. No. 369 of 2006

gives effect to the EU hygiene regulations in Ireland and is what Environmental Health Officers enforce.

How long is the certificate valid?

Three years from the date of issue. Keep it with your training records, and take the course again before it expires to get a new certificate.

Will an Environmental Health Officer accept it?

The course is mapped to the FSAI guidelines on food safety training. Keep your certificate with your training records so it's there when an inspector asks.

Can I do it on my phone?

Yes. The lessons, the test and the certificate download all work on a phone, tablet or laptop, and you can stop and pick up where you left off.

What if I fail the test?

Take it again as many times as you need until you pass, at no extra cost. The lessons stay open so you can go back over anything first. Once you've passed, the course is complete and your certificate is issued.

Can I retake the course later, for example when my certificate expires?

Unlimited attempts apply to the test, until you pass. Once you've passed, the course is complete and your certificate is issued. When it's time to renew, you buy the course again and get a new certificate with a new date.

When do I get the certificate?

The moment you pass. It's generated automatically, downloads as a PDF and is emailed to you. Employers can request a copy for their records.

Do I need Level 1 before Level 2?

Not with this course. It covers both levels in one sitting, which is why it's the one most people choose. If you already hold Level 1, the Level 2 course on its own is shorter.

Can I book it for a group of staff?

Yes. We set up online licences for the whole team and you see who has finished, or a trainer comes to your premises. Use the form below and we'll quote by the next working day.

Is the online course accepted for a job application?

Yes. Employers across catering, retail, healthcare and food production accept it, and most ask for exactly this certificate before you start. Send them the PDF or bring a printed copy on day one.

Do I have to finish it in one sitting?

No. Your progress is saved automatically, and you have 12 months of access, so you can stop at any lesson and pick up later on any device.
